In one sesshin I attended there were only two required sanzen. The first and the last. In home practice there is no sanzen. What are your thoughts on this?

Sanzen is a mirror that is reflecting you. Actually everything in this world is your mirror. That is why we ask: Who sees? Who hears? Who stands? Who sits? It is this world outside that constantly is teaching us who we are. Don´t get used by the idea of these being only objects. In this way you are constantly doing sanzen.
